We’re firing up the blog with our brand-new kitchen slot – and trust us, it’s going to be tasty. First up: a dish that’s simple, sassy, and a little bit saucy (just how we like it).

Grilled Chicken & Broccoli Bowls with Creamy Garlic Sauce

Yes, it’s healthy. Yes, it’s easy. And yes – it tastes like you actually know what you’re doing in the kitchen.

What you’ll need:

  • 2 boneless chicken breasts – we’re not here for bones or faff
  • 2 cups broccoli florets – because we’re grown-ups now
  • Olive oil, salt, black pepper – the holy trinity of weeknight cooking
  • Greek yogurt – creamy and slightly smug
  • Garlic – don’t skimp, vampires aren’t welcome
  • Lemon juice, parsley, paprika – for zing, freshness and a bit of drama
  • Rice or quinoa – whatever your gut can handle

What you’ll do (and look like a total pro doing it):

  1. Grill it – Give your chicken a little love with olive oil, salt and pepper, then grill it till golden and slice it like a champ.
  2. Roast it – Toss that broccoli like you mean it, then roast or grill till it’s tender and just catching a little char.
  3. Whisk it – Mix up your creamy garlic sauce. It’s thick, tangy, and basically doing all the hard work flavour-wise.
  4. Bowl it – Layer it up: rice/quinoa, grilled chicken, roasted broccoli, and a generous drizzle (read: drowning) of sauce.

Serve it hot, smug, and with zero shame in your meal-prep game.
